Can we print the form and fill it in and take it with su to have readys or do we have to fill it in when we get there? I note they want two forms filled ion is this correct?

you can fill the M3 form in advance before heading to Vietnam. Please be advised that you will need one form at Vietnam airport only.

As I am going to get a multiple entry visa (applied for multiple entry letter). On my M3 form do I put the first departure from Viet Nam, or my final departure?

The Airport officer is not strict on that, however, please enter your first departure from Vietnam on the M3 form.
